Weekend Trip

This past weekend Bruce and I spent our time in Athens, PA for a family picnic at his parents' house. We drove out Friday night and got in late, but we took our time and enjoyed the drive so I couldn't complain even after getting only 3 hours of sleep that day. I had not met any of Bruce's mom's family so I got to meet more than a few and I'm still trying to remember all the names (I need to make some flashcards!). It was nice just to relax, eat good food, and spend time with a lot of his family that I know and meet new ones. Oh, and we made chicken, bacon, and cheese stuffed peppers for appetizers and they were really yummy, but pretty spicy. I have to give the recipe credit to Bruce, but I did most of the preparation, which is verrrry easy.
 
What you need: jalapeños or small peppers, chicken breast (we bought pre-cooked), bacon, and a block of your choice of cheese.
1. Cut tops off the peppers and jalapeños and scoop out the seeds and insides
2. Shred chicken
3. Grate cheese
4. Cook bacon (we microwaved it--so easy) and cut into small pieces
5. Mix chicken, cheese, and bacon
6. Scoop mixture into the jalapeños and cook on the grill
Viola! We ended up having a lot of leftover "stuffing" and ended up spreading the extra on toast which is great if you're not into hot and spicy.
 
  
 Bruce snapped the first half of the pictures from the way out and I snapped the pictures on the way home... I think we got some good ones... I love that drive.

  1. you two are adorable! The recipe sounds great! I wasn't aware of your love of jalapenos! Whenever I want some heat I'll add a jalapeno, and you know, living in San Francisco we're always in search of heat :o)

    1. Haha yes! They were really good! I want to come to San Francisco again this year! I don't mind the lack of heat at all ;)
